Smoothies are a delicious way to enjoy fruits and vegetables without losing any of the nutrients or fiber from them. There are many variations of the popular green smoothie out there and it is fun to mix them up to find your perfect flavor. My latest concoction uses a nectarine for amazing added sweetness, give it a try!
(I love my Vitamix for ease of making smoothies, but any good quality blender will work, you may need to chop your fruits and vegetables up a bit more, but it will be worth it!)
3 hearts of Romaine lettuce
1 cup water
1 cup baby spinach
3 stalks celery
2 Golden delicious apple (cored and chopped leave peel on!)
2 Pears (core and chop these too, leave peel on)
2 bananas
1 nectarine
juice from 1 lemon
Start with the water and Romaine in your Vitamix or blender and blend until smooth, add spinach and continue blending. Add each of the additional fruits & vegetables one at a time, blending well in between each addition to obtain smoothness. You can add a couple of ice cubes and blend well as the smoothie is best cold. This recipe makes a large enough batch to enjoy all week, you can freeze in individual jars and take one out each night to thaw for a delicious smoothie in the morning!
